Pantry Bacon (Vegan, GlutenĀ Free)

An easy recipe for vegan bacon that's allergy-friendly and made with ingredients you likely already have in your pantry. Ready in 10-15 minutes. —Apocalicious

What You'll Need
Ingredients
  • 2-4 Rice paper wrappers
  • 3/4 cup Soy sauce/tamari/coconut aminos
  • 1 teaspoon Smoked paprika OR liquid smoke
  • 1 tablespoon Maple syrup
  • 1 teaspoon Black pepper
  • 1/2 teaspoon Garlic powder
  • 2 tablespoons Refined coconut oil, melted
Directions
  1. Preheat oven to 400F.
  2. Using kitchen scissors, cut the rice paper wrappers ONE AT A TIME into long pieces that are of equal width. Set aside.
  3. Fill a mixing bowl with warm water. Fill a shallow dish or pan with the remaining ingredients listed above. Whisk together well.
  4. Line a baking sheet with parchment paper.
  5. Grab one of the pieces of rice paper wrapper. Dip into a bowl of water to wet. Dip into the marinade to coat, shake off excess gently and place on the parchment-lined pan.
  6. Repeat step above with a new piece, layer on top of the first piece.
  7. Repeat dip and layer process until you have used all the pieces and have several double-layered "bacon" strips.
  8. Bake in the oven for about 5 minutes or until the bacon looks crispy and brown. Remove from oven and enjoy!

I really wanted to enjoy this recipe because it took forever to make. I made a bunch because I thought we could have them during the week. First batch was fine, a little crispy but fine. The second was gummy even though I baked it the same amount of time. I used a different piece of parchment paper each time and only the first two batches did not completely stick to the paper! When you have to cut out strips and do all of this prep work only to have crap at the end it really is a huge waste of time. Might wanna modify this!
