Moist and tender chunks of chicken coated in a tasty sweet and sour sauce served over a simple vegetable fried rice. Simple, healthy, and delicious. —Dash of Amy
Ingredients
- Chicken & Sweet and Sour Sauce

corn starch

olive oil

1/2 teaspoon
salt

sugar

ketchup

1/3 cup
red wine vinegar

1 tablespoon
soy sauce

1 teaspoon
garlic powder

sesame oil

finely chopped onion

large carrot, shredded

garlic clove, minced

2-3 cups
cooked rice

1/4 cup
soy sauce

1/2 teaspoon
salt (optional)

black pepper

Directions

Place chicken and corn starch in a large ziploc baggie and shake very well to coat the chicken.

Heat a large skillet over medium heat, and add the chicken.

Cook about 3-4 minutes until golden, then flip it over and cook other side an additional 3 minutes; transfer to a baking dish.

While chicken cooks prepare the sweet and sour sauce by mixing together sugar, vinegar, ketchup, soy sauce, and garlic powder; pour over the chicken, mix well, and bake for 15 minutes at 350*.

In the same skillet the chicken was cooked in add sesame oil to the heated pan.

Add the onions, cook for 1 minute, then add the carrot and garlic, and cook for about 2 minutes until veggies soften.

Add the rice, soy sauce, and spices, mix well.

Add the peas and cook another 2 minutes.

Serve the chicken over the fried rice.
