Nutty and sweet with chewy apricots and creamy cashews. Try sprinkled over vanilla yogurt or frozen yogurt.

Ingredients

old-fashioned oats

1/3 cup
tahini

1/3 cup
honey

1/2 teaspoon
cinnamon

1/2 teaspoon
salt

1 teaspoon
vanilla extract

dried apricots

1/2 cup
cashews
Directions

Preheat oven to 300˚F.

In a small bowl, mix tahini, honey, vanilla, salt and cinnamon. Once combined, pour mixture into large sauce pan and warm on low heat. Add oats and mix well until oats are covered. If adding raw cashews, add them now.

Pour mixture onto baking sheet and bake for 35-40 minutes.

While granola bakes, chop apricots and mix with pre-roasted cashews, if using.

Once granola is baked, mix with apricot and cashews and let cool completely before enjoying.
