Castelvetrano olives are my absolute favorite olives. They’re the perfect combination of creamy and briney (yup, that’s a word) without being bitter. That’s my problem with a lot of other olives that you can buy at the store, they’re too bitter.
Castelvetrano olives alone are the perfect snack to pair with a cocktail which is why I always have them on hand but have you ever used them as the star of a dish? This recipe highlights the olives and trust me, everyone will be impressed.

Ingredients

block of Feta cheese

1 cup
Castelvetrano Olives

1/4 cup
Extra Virgin Olive Oil

1
garlic clove, chopped.

1 teaspoon
lemon zest
-
1/2 tablespoon
thyme leaves

1 pinch
red chili flakes

Pita Chips
Directions

Pre-heat oven to 425 degrees

In a small baking dish, add 1/8 cup of the olive oil. Swirl to cover the base of the dish.

Place block of feta cheese in the baking dish.

Top with olives, garlic lemon zest, thyme, and chili flakes.

Drizzle the remaining olive oil on top.

Bake for 25 minutes.

Remove from oven and serve immediately with your choice of dipping vessel.
