Beetroot and Sweet Potato Latkes

What You'll Need
Ingredients
  • Three small raw beetroots peeled and grated thinly
  • Two Large sweet potatoes peeled and grated thinly
  • Four small garlic cloves peeled and minced
  • One tsp of salt
  • A pinch of black pepper
  • One tsp of oregano
  • Two eggs cracked
  • 6 tbsps of sunflower oil
Directions
  1. Get out a large mixing bowl and mix the beetroots, sweet potatoes, garlic, seasonings and oregano. While mixing get rid of the liquid from the vegetables. Then add the eggs in and continue mixing until properly combined.
  2. Preheat the oven at 230 degrees Celsius, get out a flat baking tray with baking paper, grease the baking paper with sunflower oil and divide the latkes into small sizes on the tray and after that put all the latkes in the oven for 10 min or until the bottom parts are cooked. Once the bottom parts are cooked flip all the latkes and let them cook for another 10 min or until fully cooked.
  3. Once they are all cooked turn off the oven and serve the latkes on a lovely platter of your choice. Enjoy!
