I have taken the mat out and use quarter sheet pan sized parchment instead, with no further problems. I have also put a baking stone on the remaining top self of the oven and use it to finish the bread to achieve a little more browning. So, for a 40 minute bake time, I remove the door at 20 minutes, and move the loaf to the top shelf baking stone with 5 minutes left. This achieves a beautifully risen and evenly baked loaf that is nice and brown, has a perfectly thick crust, and moist crumb. Because of uneven heat distribution in my oven I used to rotate the bread several times during baking to achieve even browning. This resulted in loss of temperature in the oven and was a hassle. With this bread oven, I do not have to do this because the heat is evenly distributed by the cast iron and temperature changes from opening the oven are buffered. I do not feel the need to add water since the closed chamber retains steam generated by the baking bread. I worry that adding extra steam could result in rusting of the cast iron or make more frequent seasoning necessary.
Like any change in your baking process, there is a learning curve but I was pleased with the results from the first use. After a few times, I am very pleased with the product result and am making some of the best bread yet using this oven. There is, also, more flexibility in making different shaped loaves than domed cloches. I have made boules, baguettes, and batards in this oven with equally good results.
