This workhorse work of art from Smithey is inspired by the American farmhouse skillets of the 18th and 19th centuries, and we can tell just by looking at the handle. Each one is hand-forged by a Charleston-based blacksmith, making it one-of-a-kind. And since it's built from carbon steel, it'll since on any surface—induction stovetops and grills included—just like cast iron but at a lighter weight. With that extra-roomy 12-inch size and sleek, pre-seasoned finish, this one’s ready for just about anything that comes its way.

Not effective as nonstick
I love the look of the pan and I have no doubt that it will last forever. However, I really think they need to include more directions on what to cook first to build up your seasoning and how to create more of a nonstick surface. As of right now, eggs cannot be cooked in the pan; they stick like glue. And anything else I’ve tried has stripped the seasoning right off. I’m a little disappointed, but I’m sure it can be remedied. More detailed instructions or tips would be helpful.

Lovely but flawed
Breaks my heart to give this one star but it's almost unusable. I ordered this as a gift for my daughter. She's used it, I've used it. We both have the good fortune to have collected some wonderful kitchen tools/supplies. On a visit to friends for Thanksgiving I found out that they have the same pan. Unfortunately we all had the same unacceptable issue - the skillets have a significant raised spot in the center of this very shallow pan. This causes any oil or sauce to collect around the edges and if low oil or sauce is used, the center of the pan is dry. This means that meat will sear unevenly and or burn at the center. It's so disappointing for such a costly skillet. My friend returned their first Smithey due to this issue and received a replacement only to have the same issue. This skillet also has exceptionally low sides. We seared lamb chops in this skillet and the 2" chops were slightly higher than the edge of the skillet. My daughter wanted SO much to love this - it's a heirloom piece that should live for generations in her family but it's so frustrating to use that it's become something she admires but never uses.

Awesome pan!
This is a pan for a lifetime. So I have used this pan for everything. But it is incredible for baking chicken in the oven. It seems to extract all the fat without the taste or moisture. It is also beautiful and lightweight.
