Coming out on top.

This here skillet is the number-one recommended enameled cast iron by America’s Test Kitchen, and no wonder. That cast iron distributes and retains heat like a pro, while the black enamel interior is ready to get searing from the start, no seasoning required. (You can even wash it up with soap and water after.) That’s not all, either: It’ll develop a natural patina over time, keeping it slick as can be. Since it’s durable enough to resist staining, chipping, and cracking, you can pair it with your metal utensils, no problem. It’s the lightest-weight cast iron skillet of its size, and the wide helper handle makes it even easier to take to the table. Top-notch steak, oven-baked cornbread, and so much more, here we come.

Le Creuset’s 11.75-inch skillet gets frying on all stovetops, including induction, and can hop in ovens up to 500°F. We love it for seared steak, roasted veg, pan-fried crab cakes, golden-brown cobblers and tarts...options abound.

Materials:

Enameled cast iron.

Care:

Wash your enameled cast-iron cookware in hot, soapy water before its first use. For cleanup, hand washing is recommended. Avoid metal scouring pads or abrasive cleaners—a soft sponge and a good soak are your best friends here. Always let your pan cool for a few minutes before washing.

Nylon, silicone, or wooden utensils are best for your pan. You can use metal utensils, but they may damage the enamel coating if they repeatedly scrape or knock against the coating. Do not use an electric mixer inside the pan, and do not cut food inside the pan with a knife (this can damage the enamel as well).
