Like Blueberry Muffins? You're Going to Love This Weird Spicy Cake

June 30, 2016

It's hard to beat a good blueberry muffin. It's a summertime classic that sits squarely in the realm of breakfast foods despite not having a single ingredient to nudge it into the wholesome category—okay, aside from the berries. A muffin is basically an individually-sized breakfast cake.

For those times when you want to nudge a blueberry muffin even further into the dessert category, Blueberry Cake with Peanut Streusel is the cake for you. Granted, the recipe name seems normal enough, so if you're wondering where the "weird" claim comes in, just wait—it's two-fold: The cake's glaze includes peanut butter and lime juice and zest, and the streusel topping includes cayenne pepper. And somehow it all works together—really well.

Give it a shot—swap conventional for crazy:

Is there an ingredient or a dish you find yourself making the same way every time? Tell us in the comments and we might feature it next time with an idea for changing it up!

Hi Kentuckylady - I think your comment might have been meant for another article (perhaps this one? https://food52.com/blog/13972-fruit-roll-ups-are-back-they-aren-t-just-for-recess), in which case, yes, frozen fruit works, too.
