All this month, members of our Cookbook Club have been cooking up a storm from Diana Henry's Simple. Through it all, they've had Diana by their side, as she answered members' questions on everything from how to encourage kids to be adventurous eaters to her top 10 cookbooks of all time.

Last night’s dinner: Burmese Chicken with Tart-Sweet Chile Sauce and a side of Roast Potatoes with Chili, Mint, & Preserved Lemon courtesy of the cookbook Simple by @DianaHenryFood. While the turmeric may have stained my fingers yellow, the chicken marinade was incredible on its own. The Chile Sauce on the other hand was way too hot for me - likely used the wrong kind of dried red chilis! The potatoes were easy and delicious, and will definitely be added to my normal recipe rotation (love excuses to use preserved lemon).
