Other than quick stovetop cooking, your beloved low and slow oven braises will be shelved for a few months, at least until the first cool breaths of fall blow through later in the summer.
But what if you're jonesing for your favorite cookies, cakes, and muffins between now and September? Surely, no one will stop you from turning on your oven, but we're here to introduce you to a quicker-than-quick way to satisfy that sweet craving without sending the kitchen temps rising.

Would you believe this glorious Peanut Butter Oat Freezer Cookie comes together in all of 10 to 15 minutes? The single-serve beauty from Lindsay Maitland Hunt's Healthyish truly ticks off all the boxes when that mid-afternoon slump hits. Oats add a nice heartiness and melted chocolate is obviously a welcome guest at any cookie party. The flaky sea salt is optional, but we'd highly recommend not skipping it, as it helps set off all of the components nicely. Most importantly, it's NO-BAKE! Just stick it in your freezer until it sets, and it's done.
“Fair warning: Once you know how easy it is to make a single peanut butter and chocolate cookie, you might get in the habit of making one every single night," shares Lindsay. "I originally developed this with almond butter, which tastes equally delicious, but can be pricey. If you have a peanut allergy, any other nut butter swaps in perfectly well.”

- 2 tablespoons heaping, quick-cooking or instant oats
- 1 teaspoon confectioners’ sugar
- 1/4 teaspoon pure vanilla extract
- 1 tablespoon semisweet chocolate chips
- 1 pinch flaky sea salt, for garnish (optional)
