What makes for an especially flaky pie crust?

How do you clean a burnt pan?

How do I fix an over-salted soup?

For the past 10 years, the Food52 Editors have been answering your food-related questions on the Food52 Hotline: from the philosophical, to the technical, to the...very technical.

And now, we’re taking your burning questions to the airwaves. From the Food52 Podcast Network, this is Hotline Offline, our new call-in show for home cooks, and I’m your host, Esther Choi!

I’m a long-time Food52er, experienced instant-ramen hacker, and professional chef and restaurateur. I learned how to love food through my family—especially from my grandmother who has been the biggest influence and mentor in my life.

Cooking at home requires a different set of skills than at restaurants, and together, with the help of a few of my food friends, we’ll dive deep into the best practices for ultimate deliciousness so you can leave each episode armed with ideas to try out in your home kitchen.

Think: low-effort, high-reward cakes with ATK's Elle Simone Scott, preparing for a plant-based holiday with Resident Amy Chaplin (and preventing holiday disasters with Food52 columnist Ella Quittner), getting ahead on meal prep with Dan Pelosi, and so much more.

The lines are now open! Call ‪(518) 291-9877‬ and leave me a message on the hotline. We’ll get to the bottom of your kitchen mystery together.

Follow Hotline Offline on Apple Podcasts, Spotify, or wherever you listen, so no question goes unanswered, and no answer goes unheard.
