Awesome. I have pheasant in the refrigerator from my husband's hunt this weekend and was pondering my options for dinner tonight. Now I know!

I'm not a hunter, but rather a long-range bicyclist and serious birdwatcher relocated from California to Montana. Totally get your infatuation with the big sky. Glad you had such a good time and that such great food came from it. Love pheasant. In any form. We regularly scare them up out where I ride off-road while the dogs run. Border collies who want to gather them. On 2 wheels, terrifying. On a platter, fantastic.

The whole feeling of big sky from New Mexico to Montana just gives me the warm and fuzzies. I like when you take a walk in the morning and you can hear the roosters clucking in the tall grass.

I was out morel hunting last spring in an area where we could hear them in the grasses all around us. You're right, it's a lovely sound. Oh, and a great horned owl was keeping an eye on us.

Poignant. I just read the current cook spotlight and thought it was great that Enbe is a vegetarian and an evolutionary biologist. A vegetarian myself, I believe I can put an equal sign between the latter and a hunter with rules like yours.

Thanks Droplet. My wife is a vegetarian and while lots of nights there is animal protein on the table (for me, the girls and any guests) there are also many nights when it is absent. I have come to a point in my life where I have discovered not everything on the table has to have meat in it in order to be delicious. For me a vegetarian meal is a wonderful addition that adds a whole new variety of tastes and flavors to the table.

I am not going to say there aren't bad apples out there but over all the hunters I meet are great folks who have respect for the wildlife around them and their surroundings.

Thanks for posting. Not so long ago, I used to frown upon hunters; why would someone want to go out on a beautiful day and kill something? But, the more I learn about how horribly the (meat/poultry) we purchase on a daily basis is treated, the more respect I have for those who follow your rules for ethical hunting, which I believe is the vast majority.
