Part of the fun of eating sandwiches is making them -- especially when you're in charge of what to put in them. This week, the Food52 test kitchen was all about DIY sandwiches -- both sweet and savory.

First, we made ice cream sandwiches to celebrate a couple of staff birthdays. We cut the cookies in pieces so we could have a taste of each one: chocolate chip, oatmeal raisin, and peanut butter. Not pictured here were three tubs of ice cream to go with: chocolate, vanilla, and coffee. The mocha sandwich (chocolate chip + coffee) was a crowd favorite.
