Today's lunch is from a Monday, when I was completely unprepared to get back into the weekday swim. I was also running behind, so I reached for easy wins: sungold tomatoes tossed together with salt and olive oil (I didn't bother to halve them). A single ham and cream cheese sandwich, split in two for my kids to share. And two cute little apples from our CSA. I think lunch was ready in 4 minutes and 13 seconds. So, yes, busy lives and healthy lunches can coexist.
