The more white vinegar you add, the hotter it gets. If you are using a hand grater make sure that you go outdoors and grate it.

I still don't understand the question. How will it be used? The easiest answer is to buy either prepared horseradish or horseradish sauce in a jar. But is this for beef, beats or borscht???

I grate the root and keep in white vinegar. You can add a pinch of sugar if you want. Fresh is nice with beef.
