For this week's contest, do the recipes have to involve both ingredients? Or can it just be a sage infused recipe?

I'm guessing both. Past contests with more than one ingredient (feta, blood orange and mint; lemon, thyme and a grill) have required all ingredients. Think of it as you're very own "Chopped" box!
