How long do I need to cook chili verde to ensure the pork is tender?

Thanks! I cooked it for approximately 3 hours (I cooked a TON!) and it came out perfect!

I make chunks about 1 1/2 inches and cook at least two hours. Since each piece of meat is different, I usually cook it a day ahead and start checking for tenderness with a fork after two hours. The additional benefit is that the flavors meld overnight and it's better the next day.

It depends on the size of your chunks of pork. For chunks that are about an inch or two I would check it after 2 1/2 hours
