We opened a jar of black garlic the other night for shrimp scampi and now would like to use some more this week in another dish.

I like to smash up black garlic with soft butter and stuff it under the skin of a chicken before roasting -- really delicious.
My favorite is making a Persillade, which is a mixture of minced garlic, parsley, and olive oil. You can use it on chicken, sear until the skin is crispy and then throw it in the oven at 350 until it is cooked through, and when it comes out of the oven put the Persillade on top and pop it back in the oven for a minute just to toast that garlic ad your done. It is amazingly delicious ;)
