Thinking of what would go well with the garlic and offer a strong enough taste to complement the shrimp, I would go go a dark green vegetable like grilled broccolini or a salad of mixed dark greens.

Other ideas - a Cole slaw with lots of green herbs or (if you don’t mind two carbs in one meal) roasted corn on the cob.

Last, if you want more ideas there are web lists (up to 60 items) of side dishes that go well with grilled shrimp.

For the Cole slaw - yes any green herbs,
But the ones with soft larger leaves (like basil or cilantro) work better here than those with smaller or harder leaves (like thyme or rosemary).
