I would like to make a brown butter powder. does anyone have experience using maltodextrin to turn an oil into powder. Other ideas??

Yes, it's pricey tho. It does make a nice oil "powder" that turns back into oil in your mouth. Brown butter would be good but could go bad very quickly if stored, as all 'oil powders' do..they love moisture from the air.

Nutella or peanut butter are also good to use with Tapioca Maltodextrin for deserts.
One suggestion I recommend is Nutella with TM...bananas sliced on an angle into 1/2 slices..Dip the top in sugar, caramelize with a blowtorch (think a creme burlee crust), and serve with a small table spoon of icecream and Nutella powder, and nutella powder around the dish.
