sub coconut oil for butter in caramel?

making caramel chocolate covered matzoh - i tried to make a batch with earth balance instead of butter for my vegan friends but it was nasty :( has anyone tried using coconut oil instead of butter to make brown sugar caramel?

Hi Debi, I have! I didn't just sub coconut oil but made a new recipe with all coconut products (coconut sugar, coconut oil, coconut milk, etc.).
