Also the Spanish word for sausage is chorizo which for a Spanish speaker could mean Italian sausage

In general, as I understand it, Spanish Chorizo is a dry cured and heavily spiced sausage (more salumi-like) that is great for eating straight where as Mexican sausage would be a raw heavily spiced sausage that you cook. Hope this is helpful!
