Personally I wouldn't freeze any type of cheese ever. Begin by thinking of it as a living organism that needs to breathe. Freezing kills the animal.

Totally agree with campagnes. Keep it well wrapped to prevent freezer burn and it will last for ages.

Yep, you can. Wrap it well and it'll keep for 6 months or so. Fyi, cream cheese doesn't freeze well. (I've heard people say it froze well for them, but I've never had luck with it.. turns gritty)
