I have a question about the ingredient "kale (a large bunch), - do you think I could substitute spinach for the kale? how much do you think I should use?

Not recommended to substitute spinach for kale because it does not have the same consistency. Spinach is more delicate and does not have the same earthy flavor profile. Do recommend substituting chard and kale would be best.
