Slow roasted tomatoes are fantastic, roasted for 10 - 12 hours at 200 degrees. Here's the link to my favorite source for the most wonderful savory smell that will scent your whole house --- http://www.theperfectpantry.com/2006/09/roasted_tomatoe.html.
Another 'roasted tomato' instruction source calls for 350 degrees, mixed with garlic and olive oil, for 1/2 hour -- a very different outcome.
