I like to sautee a chopped onion in a Tbsp or two of butter until softened, 5 minutes. Add1-1/2 lbs carrots, peeled and sliced and stir for another 5 minutes. Add any spices you like. Add a few pinches of curry powder, cumin or ginger, fresh or dried, is nice (or all 3.) Add 6 cups of chicken stock plus a peeled and cubed potato or two. Simmer until vegetables are soft. Puree in batches in a blender or food pocessor. Return to pot. Taste and adjust for salt. You may add cream optionally or top with sour cream or yogurt.
