Here is Chocolate and Zucchini's "Birthday chicken" - caramelized chicken legs with olives and prunes. The recipe is for a large group, but I bet you could halve or quarter the recipe and I also bet it is delicious the next day.

Do you have a clay pot? There are a lot of recipes for Moroccan style chicken dishes that are cooked in the oven.
I have a veryy good and very simple recipe whicn I modified from one I found in a libray book about cheese:
Chicken Thighs w/ Goat Cheese:
Eight Chicken Thighs w/ skins
8 - 16 oz crumbled goat cheese
2-4 tablespoons dried thyme flakes
4 oz. chopped mushrooms
Olive Oil
Lemon Juice Concentrate
Black Pepper/Paprika
In a small bowl mix the goat cheese with the thyme. Lift skin on each thigh and push goat cheese mixture inside. Sprinkle extra goat cheese misture around thighs. Place thights skin side up in a large glass baking dish. Squirt lemon juice concentrate on each. Sprinke with black pepper and paprika. Pour olive oil on top of each. Add chopped mushrooms and/or capers or other - be sure not to add too many or chicken may not brown.
Bake in 375 degree oven for an hour or so - until they reach proper temperature and desired doneness.
