Is there a good,somewhat healthy substitute for canned condensed cheese soup?

Found a recipe for Mexican Shepherd's Pie on the back of an instant mashed potato box. Sounds like something I'd like. I've figured out ways to make it more wholesome and healthier, except for what to substitute the canned cheese soup with. Make a cheese roux? Thanks!

You can probably make a mornay (a béchamel with cheese) and then thin it out with stock to your desired consistency. The mornay section of this recipe might do the trick! https://food52.com/recipes/71455-eric-kayser-s-croque-monsieur-with-mornay-sauce
