Eggs are pretty essential to quiche. You would need an egg substitute.

Yeah if you don't want eggs, I'd skip anything called quiche.

Here's a very popular alternative with a similar ingredient mix --

You might try an amalgam of the 2 recipes, picking the elements that you want, using the 'one pot' profile, since that does not use eggs.
