I've used muscat grape juice in place of vermouth - not a precise substitution but works. I also made this without the vermouth, and without replacing it - and it was still magnificent :)

You could use vinho verde or a dry white wine instead. if you're looking for a non-alcoholic substitute, that's a little trickier.
