I just got some beautiful purple carrots at the green market. Do I need to peel them?

If you peel them, be careful. I've found that the purple doesn't go very deep & it would be a shame to lose some of that lovely colour.

You don't NEED to. But, depending on how clean they are you may want to. You could just scrub very well. I can't tell you how many carrots I've eaten straight out of the ground! LOL. Enjoy your carrots. I love mine with cardamom butter and s&p.
