Do you measure then sift flour or sift then measure????

I'm ashamed to say that I dip the cup in the flour jar, slide my finger (often clean) across the top to level it and I'm done.

In my humble opinion,the "sifting thing" is just an easier way to better mix or fold the dry ingredients.Or to get rid of any residuals.So,I would say measure then sift it in.

I was taught to take a wire whisk and whisk the flour first in the flour container then measure. Whisking does the same thing as sifting.

When I was growing up, you always measured the flour & then sifted it. This puts air in it.

Depends on the recipe. Some recipes say " 1 cup sifted flour" which means sift first, then measure. Some recipes will say "1 cup flour, sifted" which means measure out 1 cup and then sift it.

I've gone to weighing out all my ingredients when it comes to baking and sort of avoid recipes that only have volume measurements, so this is a moot point for me.
