I just got pea shoots in my CSA box. What should I do with them?

I used them as a sub for bean sprouts in an Asian noodle salad recently and they were lovely!

LOVE pea shoots. Use as a garnish or in place of your favorite salad greens in sandwiches, salads, anything. I've made them tossed with just salt and super good olive oil and it was delicious!

I love pea shoots prepared simply. Scattered on a salad or with sauteed veggies. Crostini with some goat cheese topped with the shoots are good as well.

I used some on a BLT when I had no L last weekend. Yum!
