mensaque--sounds wonderful. What kind of chocolate (semi-sweet?)--or do you recommend a mix?

Glad you liked it,ATL.I like my mousse dark but sweet,so a mix works.50/50 milk chocolate and dark.

If dairy is OK,you can make the simplest chocolate mousse ever : cold cream(1liter)whipped till it spikes,then you add 1 by 1 still whipping 4 for spoons of confectioner sugar=chantilly,chocolate(1pound)melted with a spoon of butter then stir it for a while so it's temperature lowers a bit before you fold it gently into the chantilly.Pour it on wine glasses and put them on the fridge till you serve.
