Alton Brown of Good Eats has a fabulous recipe for creamed corn here: http://www.foodnetwork.com/recipes/alton-brown/better-than-grannies-creamed-corn-recipe/index.html
I freeze corn on the cob and it turns out fine. Just blanch and freeze--but then again I use a food saver so it stores well in the freezer and put in a pat or two of butter and boil in the bag a few mins to use.
I also fail if I just try to wrap them tightly and freeze.
I have not had good results freezing the corn on its cob. But I do freeze it off the cob.
I blanch the corn on the cob then with a chef's knife slice off the kernels as close to the cob as possible. I freeze the kernels spread out on a rimmed baking sheet in one layer. Once frozen solid I put them in a large freezer bag.
When I want corn I can remove just the amount I needed.
Freezing off the cob also saves a lot of freezer space.
