Put 2 bottles of red wine, 2 clementines or orange slices with some cloves stuck in the skin, 3 cinnamon sticks, 2 star anise, a thinly sliced apple, a nob of peeled ginger and an optional bay leave in a pan with the 1-pint (500mls) water. Warm, but do not boil. Keep warm for 5 to 10 minutes to let the flavours infuse. When warm add some brown sugar to your taste. Add a splash of brandy or rum if you desire for a little extra oomph.
