I'm serving asian or southwestern ribs for a potluck party and guests are bringing sides. What can I serve as an appetizer that will be fast to prep and budget friendly, too, other than edamame or bruchetta with different spreads?

These smoky fried chickpeas are a great option. Cheap and versatile! http://www.food52.com/recipes...

How about spring rolls (http://www.food52.com/recipes...) or guacamole

Those are an excellent idea! I love them. You can make them ahead and cover with a damp towel in the fridge. Cut them in half before serving on the bias to make it easier to spoon in the dipping sauce. Mint and basil are great in those too...but fresh herb only; if you buy, those might be over budget for submitter.

I often serve this eggplant as an appetizer, it is easy to make and you can also make the eggplant a day ahead... http://www.food52.com/recipes...
