I regularly make GF stuffing to include a family member who is gluten intolerant. I use an identical "regular" recipe, just substituting GF bread (available in the freezer section of most supermarkets; sometimes available in the fresh section). Taste the bread as you may want to adjust the seasonings (for example, last year we celebrated Thanksgiving a long way from home. The local GF bread -- from Trader Joe's, FWIW -- was both sweeter and blander than "regular" bread. So, I simply increased the sage and other seasonings and it all worked out really well).

I'm allergic to gluten and every year I make a stuffing starting with my recipe for cornbread, http://www.food52.com/recipes/19148_castiron_skillet_cornbread. You can use this cornbread in just about any stuffing recipe when it calls for bread!
