Rice Stuffing/Dressing
Any good recipes out there? We have a gluten free guest for Thanksgiving dinner. I'd prefer to steer clear of dried fruit as a critical ingredient.

Wild rice stuffing with mushrooms and/or almonds is delicious.
These two recipes use butter or olive oil for the fat, which are both fine. But if you have chicken or turkey fat around (from skimming your broth, etc), they would make fine substitutes and add another layer of poultry goodness.
