Does a scalloped potato dish have to be baked right after it is assembled or can it be refrigerated and then baked the next day?

Best to cook it right away and then re-heat it the next day, otherwise your potatoes are likely to turn grey overnight.

Cook it halfway the day before. Finish baking the day off...scalloped potatoes are always better on the second day.
