Anyone have a fool proof way to make collard greens so they aren't bitter?

Cook some bacon, add onions and brown them in the fat, add the washed chopped collards and a little water, let them cook down some, then add some cider vinegar ... we like a kick from spicy peppers too. This works for any mess o' greens ...
