Can I roast vegetables the day or night before? If so, how best to reheat them on Thanksgiving?

IMHO roasted vegetables actually taste better the next day. I reheat mine quickly in a frying pan, but you could easily reheat in the oven too.
It's sweet, salty, and just a little bit tangy.
