I am looking for a gluten-free dessert that travels and keeps well. Any tips?

I'm going away for the weekend to visit friends and would like to bring a gluten-free dessert for a potluck dinner that we're having. Any suggestions for a GF dessert that travels well (by bus) and keeps for a few days? Thank you!

Go old school... Icebox dessert! Super versatile. Any sort of flavorings you want. Keeps well, can be made ahead, and travels well as long as you can keep cool.
