The pie crust recipe from SmittenKitchen.com, "Pie Crust 101." It incorporates the vodka trick (which really works) from Cook's Illustrated and another good tip for rolling out the crust between two sheets of plastic wrap.
Specifically for pie crust, cream cheese recipes are the most novice-friendly.
