you can replace pine nuts also with pistachios and it work great!
Otherwise walnut... but check if your bf is alergic to that.

Is your boyfriend allergic to pine nuts? If not, I might try something like the stuffing here, with pine nuts instead of walnuts: http://food52.com/recipes/15527-fabulous-stuffed-veal-chops
