Can you marinate shrimp in sake overnight without ruining the texture?

Since sake is acidic, I'd say 15-20 minutes (tops). More than that and your shrimp will cook and the texture will be very mushy.

Crazy Nico is correct. You would almost be making a wierd form of ceviche.
