Chef LuLu it looks like you've revised your egg question. "Breakfast burritos" can be made a day ahead provided that as you make them you wrap them in foil in the standard method. I have a similar gig coming up. You will need to be able to reheat them---I use a 350F oven for about 10 minutes. What you might be able to do is to use your grill to warm up the burritos---but you will have to unwrap them. The truth is a steam table is pretty useless around eggs and tortillas.
