Poached artichoke hearts in olive oil or water. Can these be stored for 3-4 days in a Qt. container?

Yes, and oil would be best. Toss in a whole dried pepper (pepperoncino) which will help inhibit bacteria. In this case it's best to refrigerate. You can then repurpose the olive oil.
