Polish cold beet soup recipe calls for "beet concentrate". Is it available commercially or do I have to make it? If so, how? Thanks.

We have been in Poland where it has been HOT. Loving these cold soups, the beet one and also one with cucumber, dill and/or mint! Wanted to recreate at home. Thank you!

Ooh, those sound refreshing. I just searched online and a couple brands came up, one was on Amazon. Seems like a standard Polish product... I noticed at least one had salt and some spices added (didn't say which ones). Good luck!

I've never seen beet concentrate but it may be available in a health food store or a vitamin shop. If you have a juicer, then peel raw beets and juice them. This will create a concentrate. Alternatively you could food process the beets until they are completely pureed. Then strain it to get a concentrated liquid. To get 1 cup of beet juice you'll need about 1 1/2 pounds of beets
